Wait — what exactly is cascara?
Fair question — a few of you have asked. Cascara is Rhamnus purshiana, a native Pacific Northwest tree; old-timers call it cascara sagrada, "sacred bark." It grows wild in the Oregon woods and blooms for only a short window each spring, with small pale flowers most people — and most beekeepers — walk right past.
Ours don't. For those few weeks our bees work the cascara bloom, and what comes back to the hive is unlike anything else in our yard: pale, delicate, and startlingly sweet. There's so little of it that almost nobody bottles a single-origin cascara honey. That's exactly why it's this rare — and this special.
